          MARJORAM MUSHROOM SOUP:

                       INGREDIENTS :

1/4 cup butter

1 large leek, chopped

1 large onion, chopped

4 cups sliced fresh mushrooms

1 large potato, peeled and diced

4 cups chicken broth

1/4 teaspoon salt or according to your taste.

1/4 teaspoon black pepper

2 tablespoons chopped fresh marjoram

1/4 cup sour cream

2 teaspoons prepared horseradish

                  HERE IS THE RECIPE :

In a large pot over medium heat, melt butter and


cook leek and onion until soft, about 10 minutes.

Add mushrooms and potato and cook for another 10 minutes, stirring occasionally.

Add broth, salt, pepper, and marjoram and bring to a boil. Reduce heat and simmer until potato is tender, about 10 to15 minutes.

Transfer soup to a blender or food processor and puree until smooth. Return soup to the pot and reheat gently.

Stir in sour cream and horseradish and adjust seasoning if needed.
